Yeast extracts, referred to as "yeast foods", can optimize these fermentation processes because they provide a multitude of essential nutrients for the fermenting yeast such as free alpha-amino nitrogen, minerals and vitamins, or generate an added benefit for a product as a result of their antioxidative properties.

Yeast Extract is an autolysate of yeast cells used in preparing microbiological culture media in a laboratory setting. Yeast Extract is not intended for use in the diagnosis of disease or other conditions in humans. Yeast Extract is the water-soluble portion of autolyzed yeast.

It is often used in food or eatable items as food additives to create umami taste sensations & savory flavors in packed food products like canned & frozen soups, bakery items, sauces and savory mixes, snack foods, frozen meals, dairy products and many more. It is also used as nutrients for bacterial culture media.
